Call Care, they will need to change the setting for you.

This is not something you will be able to change from your end. You must contact care so they can change the settings in their system.

There used to be a couple threads that had the menu tree to change language -- they don't appear to exist anymore (based on my Google search of where I had posted those links previously).
If you want to do it on your own, the only thing I can suggest is to find a spanish speaking person (go back to your high school spanish teacher? Take a trip to Spain and take advantage of T-Mobile's awesome global roaming features?) or contact Customer Care to have them reset your language.
