I hope your weekend is going well, so far! This is an issue that I haven't seen creep up after the latest V10 update. You had a great idea with trying to reset the saved fingerprints and it's a bummer that didn't work. The next thing I would recommend is a master reset. Sometimes a reset is needed after a software update, especially if they have problems like the one you mentioned. Here are the steps to reset your phone:Device resets: LG V10. Please make sure to back up all of your info prior to completing the master reset.

I have had the same issue with the recent update. I have an S8, and I have tried resetting my fingerprints. About 1 out of 100 times it works and lets me in my phone. It just keeps saying cover the whole sensor. I guess I have small fingers? Is there a way to fix it without doing a master reset?
