You should see a paper bill mailed to you within 2 weeks of cancelling. You could also call T-Mobile.
Once you've cancelled T-Mobile service your online profile is cancelled along with it. You may request a paper statement via Customer Care to be mailed to you or you can visit a store within the next 60-90 days for a print out. But the online profile is permanently gone, unless you restore service. I hope this helped.
