On the note 2, I could easily hide apps that were seldom used and cluttering up the app tray. That option is not available on the note 3. How can I get rid of the clutter without disabling or uninstalling?
Looks like Hiding apps like in the Note 2 is not possible.
Although you may be unable to uninstall some preloaded apps, you may be able to hide and disable them. This causes them to hide from the Apps menu and not perform updates.

Thanks Drew. I was already aware of how to do this. It's a shame that you can't simply hide apps anymore. A good example is apps that are usually not launched directly, but by other apps instead. There is no reason to have them in the app tray and disabling them would render them useless.
