This is what I did:
1. Installed iFile and Tetherme
2. In iFile, I went into the carrier.plist but did not back up the file carrier.plist (I dont know if this is a problem or not)
3. Set the PhoneNumberRegistrationGatewayAddress and set it to the +001 number
Would it be possible for you to talk to me on the phone and guide me through it?
I think i copy and pasted the wrong p.list which i believe is messing me up.

Have tried dns change. This article explains how:
Changing dns may fix both message and FaceTime issues
Got both working and it was easy.
Go to settings > Messages tap on Receive At tap on Apple ID Sign Out - it should turn iMessage OFF - turn off phone
Power back on Settings > Messages > iMessage ON Send SMS ON tap on Receive At tap on Apple ID (reneter id> tap on Add Another Email as your preference, but you should be done by then..
Send a Text to a known iphone user set with iMessage and your SMS bubble should change from green to blue once the message is sent.
Repeat the steps above for Face-Time - very much the same - remove account, reset phone, add again your Apple ID account wait until verify the number and done.
Just joined the t-Mobile family with 2 iPhone 4S - both now iOS 5.1.1, but mine started on 5.0.1 just upgraded last night. Works great except for the pesky phone number registration gateway going to UK for verification. The evil of not having a US_t-Mobile.bundle under the Carrier Bundles list.
